Filling and Topping with 150 g of whipping cream, whisked with 20 grammes of segar (a bit too sweet) , stir mix with 200 g of mascarpone. 


A few drops of egg yolk dropped into the egg white causing the failure in peaking foam.  I added 2.5 g gelatine (soak in warm water, stirred) with some milk, chocolate and steamed the chocolate putin.

Whipping Cream

Yes — the creamy layer you see on cakes is usually whipped cream, but there are different types of cake creams depending on the flavor, texture, and purpose.

(I)      Simple Basic Heavy Whipped Cream (with or without Chocolate flavor)

(II)     Healthier Yogurt Whipped Cream Light

(III)    Buttercream Frosting

 (IV)  Cream Cheese Frosting

 (V)   Stabilized Cream Frosting / Whipped Cream Cheese Frosting

(VI) Clear Gelatin Glaze/Gelatin-based mirror glaze, agar Jelly Glaze, or jelly topping 

(VII) Gelatin Mirror Glaze Transparent glossy Layer over Fruits (e.g., strawberry tarts)

BAKING CAKES AT HOME -  BASIC CAKE AND CAKE DECORATION


🧁 Basic Whipped Cream (for frosting or filling)

Step 1

  1. Chill everything 

  2. chill mixing bowl and whisk should be cold
    (place in fridge/freezer for 10–15 min).

Ingredients:

  • 1 cup (240 ml) heavy cream or whipping cream (at least 30–35% fat)

  • 2 tablespoons sugar (powdered sugar works best for smooth texture)

  • 1 teaspoon vanilla extract (optional, for flavor)

Step 2

    (2.i - optional) Stabilized Whipped Cream (won’t melt easily)

        Good for tropical climates (warmth) or when the cake needs to stay out longer.

  • Add 1 tsp gelatin (softened in 2 tsp water) or 1 tbsp cornstarch or 1 tbsp milk powder to your cream before whipping.  

         (2.ii ) Pour in the cold cream

    Start whipping (using hand whisk, electric mixer, or stand mixer).
  1. When it starts thickening, add sugar and vanilla.

  2. Continue whipping until soft peaks form (for filling) or stiff peaks (for decorating).

         (2.iii ) Do not overwhip

    it’ll turn into butter!


🍰 Optional Variations

(A) Buttercream (sweeter, heavier)

Beat until fluffy:

1 cup unsalted butter 

2–3 cups icing sugar,

1 tsp vanilla, and

1–2 tbsp milk

 (B) Chocolate Whipped Cream

                Add 2 tbsp cocoa powder + 2 tbsp sugar before whipping.

    For richer taste, melt 100 g dark chocolate, cool slightly, 

    and fold into whipped cream after whipping.


  1. (D) Cream Cheese Frosting (for carrot/red velvet cakes)


    • Beat
      200 g cream cheese, 
      100 g butter, 
      1 cup icing sugar 
      1 tsp vanilla

Last month, I bought the pineapple tarts from Tao-Bao, they came with these small size metal tins with clipping covers, just good for mini log cakes / Tiramisu / cheese cake.  

Put in water to test if they leak? No, not leaking.  

Defrost 1 block of butter and 6 eggs to get room temperature. 
Go out buy whipping cream.

Gingerbread Santa's Workers' Squatter
taste very yummy with the combination of cake, fresh cream and the gingerbread biscuit with no decorative sugars and colorings.  Reduced sugar not too sweet, just perfect, can reduce further..

bought the Ginger Bread Santa's House from IKEA.  it looks like the packet I took has missed out those small little decorative candies.  Never mind.  I can change the design anyway.  it's too simple and does not look good to eat.

  

BAKING CAKES AT HOME -  BASIC CAKE

Butter Cream
Whisk 5 minutes at medium speed.
50 gram butter, 
10 grams sugar with 
1 liter of Whipping Cream (SGD7.50 per box) for both cakes.

STEP 8 let cold down completely, ready for paving.

       

     

STEP 7 BAKING IN THE OVEN
Set Oven at 180 degree, 50 minutes, Center Tray.
(*adjust accordingly, different oven different outcome.)

  

STEP 6 Transfer to baking tin.

   

STEP 5 Stop whisking, Fold in the egg-white foam with sugar butter flour mixture.
Fold in the white foam, 
1/4 by 1/4 each time.
you may spin few rounds, but not too much.

    
      

STEP 4 Whisk with the flour mixture
pour in the shifted flour into the sugar butter, 
spin at low speed, 
1/4 by  1/4 (flour) each time.
Scrape the side on and off.
Squeeze in some lemon if you are using baking soda and / or tartar cream.

   
    

STEP 3 Shifting the flours

SANTA'S HOUSE CAKE
Shifting the 300 grams self-raising flour, 
3 grams baking soda, 
10 grams baking powder.
3 grams tartar cream (optional).

  

STEP 2(c) Whisking add two eggs to the sugar butter 3 minutes, low to medium speed.

STEP 2(b) Whisking the sugar butter for 5 minutes, low to medium speed.
Change another container.
whisking the 250 grams butter with 20 grams sugar, until the colour turns white.

      


STEP 2(a) Whisking the egg-white foam for 5 minutes, low to medium speed. 
6 egg-whites, until the mixture is solidified. 
Move out the entire container.

70 ml melted butter

Whisk low speed 1 minute,

20220211 Friday 1900 After Rain Morning



Whisk 2 overripen bananas, put them aside.

    

Whisk 250g (one block) of defrosted Lurpak butter.  
If the frozen butter is too hard you can try to microwave 30 seconds before whisking.

( OPTIONAL   Add in 20g of sugars gradually, if needed,  otherwise banana itself is sweet.) 


Whisk two  minutes until the mixture turns to light yellow or pale white in color,

Add in 4 eggs gradually,

 

Whisk for another three minutes until all mixed well.


Sift in 200 g ( 1  cup ) of self-raising flour 
with <1/4 teaspoon (1g) of baking soda + Lemon/Lime Juice 
and/or 3/4 to 1 teaspoon (3g) of baking powder.




Baking soda leaves a baked good when exposed to heat. 
Need to neutralize with an acid (such as lemon/lime juice etc)
otherwise, the finished baked cake will likely have a metallic taste.

Baking powder contains baking soda. It is a mixture of baking soda, cream of tartar (a dry acid), and sometimes cornstarch. These days, most baking powder sold is double-acting. This means that the first leavening occurs when baking powder gets wet– like when you combine the dry and wet ingredients in the recipe. (This is why you cannot prepare some batters ahead of time to bake later– because the baking powder has already been activated.) The second leavening occurs when the baking powder is heated.

Double (first, second) acting.

Transfer and add the dry ingredients to the mixtures, continue to whisk.

       

Pour in the mashed banana.


A  Quick minute Whisk till all is mixed well.

Wipe clean and turn on to preheat the oven at 180℃.


Transfer / pour all mixtures into the baking container.

    

 

Use middle tray in preheated oven at 180℃ bake for 45 minutes.

Can see the Cake is rising to twice its height in the oven.

Take out from the chiller,  add some  topping such as cheese, chocolate chips, or harsh mellow, etc,

Quick Bake a loft of banana cake.

 

Whisk 4 overripen bananas,. Put aside.

Whisk 125g (one block) of CSC butter,

Add in 20g of sugars gradually, 

Whisk until the mixture turns to light yellow or pale white in color,

Add in 4 eggs gradually,

Sift in 200 g ( 1  cup ) of self-raising flour with 5g of baking soda and 10 g of baking powder.

Pour in the mashed banana.

Whisk till all mixed well.

Pour all mixtures into the baking container.

Use middle tray in preheated oven at 175℃ bake for 50 minutes.


Crispy skin,  soft and bouncy texture.

Take out from the chiller,  add some  topping such as cheese, chocolate chips, or harsh mellow, etc, 
Toaster bakes 180°C for 10 minutes before consuming.

20220105 Wednesday 1140 Sunny Morning. 

Finally stopped rain after FIVE NIGHTS of continuous heavy rain.

Good day.
Chill the three sardine tins cake in the fridge for next-day consumption.   
Frost it if needed to keep it for a longer time.   

Preheated upper and lower tray 180°C.
Bake 50 minutes.

   

CONTAINER (A)

Philip Whisker whisks 8 eggs white for 12 minutes.  

add in 20 grams of fine sugar gradually. 

CONTAINER (B)

Whisk butter for 10 minutes, add in 40 grams of sugar gradually. 

Add in the egg yolk one by one.

Add in self-raising flour scope by scope.

Add in Vanilla essence and Orange Juice whenever they are too dry and hard.

Squeeze in one slice of lemon juice.

Whisk till all smooth.

add in ingredients (egg white foam)  from container (A) scope by scope quickly while whisking.  Stop whisking immediately once finish mixing in all egg white foam.  Do not over whisk.

Pour all ingredients into the greased containers.




INGREDIENTS 

8 eggs separated yellow and white.

250 + 100 grams 1 1/2 block of butter 

2 cups of sifted self-raising flour with 5 ml baking soda and 10 ml baking powder. 

Grease all containers.

  

This handy Philip whisker has been with me since 2004.  Still love durable Japanese products.

EASY BAKING AT HOME

Bake 4 Banana Sponge Cakes in the Sardine Tins.

I enjoy working with my Mayer Oven, Handy Philips Whisker, Recycled Plastic Containers, and Good Quality Sardine Tins.

Banana Sponge Cakes

20210119 Tuesday

Cold Morning.

Baking Banana Sponge Cakes in four sardine tins.

The crispy top soft spongy texture banana sponge cake.

    

Preparation

Grease 4 Sardine Tins and/or pave with baking paper.

(A)   In a 500 ml plastic container,  Machine whisk 4 egg whites for 3 minutes.  Add in 20 grams of fine sugar gradually.

(B)   In a 500 ml plastic container, whisk 2 Large Over Ripe Banana for 3 minutes.

(C)   In a large mixing bowl, Double Sift 2 cups (500 grams) of self-raising flour mixed with 1 tsp of baking soda and 1 tsp of baking powder.

(D)   In a 1 ltr plastic container, whisk the following:

  • 250 g butter
  • add in 50 grams of fine sugar gradually
  • add in 4 egg yolks gradually until all mixed well
  • continuously add-in (C) sifted self-raising flour and (B) whisked smashed banana alternatively. If the batters get too dry can add in 3 to 5 tablespoons of fresh milk gradually.
  • quickly add in (A) the whished egg white scope by scope and stop the machine immediately once it's combined. Do not over mix.

Transfer all batters into 4 separate greased sardine tins.

Baking

Preheat Oven Upper and Lower heater at 180 °C for 10 minutes.

Bake 180 °C for 40 minutes at the middle tray.

Test with skewer.

Serve while warm.
