✅ Yes, those roots inside the soil will grow up down left right everywhere, roots grow down, sideways, and outward, not only straight down.

What happens underground (瓜类真实行为)

Roots do NOT only grow downward

They grow:
↓ down (anchor + water)
→ sideways (nutrient foraging)
↑ upward (if moisture + oxygen exist)

Tap root goes down first

Then lateral feeder roots spread:
left / right
slightly upward
around obstacles

If soil is added later → roots will colonize the new soil, new feeder roots will grow into the newly added soil.  Plant will stabilize itself naturally.

Just gradually add soil on top, keep soil moist but airy, the stem section touching soil may even form extra roots (bonus)

📌 Key rule

As long as:
Soil is not waterlogged
Water evenly (not flooding only bottom)
→ The plant will self-correct.
